NZ King Salmon Crudo

Yuzu-olive oil dressing

  • 6tbsp extra virgin olive oil
  • 3tbsp lemon juice
  • 1tsp yuzu kosho

Additional ingredients required for assembly

  • 30g NZ King salmon, fat and bloodline trimmed
  • hawaiian red salt
  • 20 thick slices hearts of palm
  • 20 slices red pepper stuffed green olives

Cooking instructions

Yuzu-olive oil dressing

  1. Combine all ingredients in a bowl.
  2. Whisk and reserve.


  1. Slice 20 chilled pieces of salmon, about 1/8 inch, sushi style.
  2. Spread 5 pieces of salmon on each plate.
  3. Sprinkle hawaiian red salt on salmon slices.
  4. Top each with heart of palm slice.
  5. Top each with stuffed olive slice.
  6. Drizzle with yuzu olive oil.
  7. Serve immediately.
