Cooking Tips
Trumpeter is highly prized in New Zealand for its firm, white, moist flesh and delicate flavor. Because it holds its shape beautifully and doesn’t flake apart easily, it is most commonly cooked using dry-heat methods. The absolute most popular ways to prepare it are pan-frying (often with a light flour dusting) and baking.
