Cooking Tips

Silver warehou is a highly versatile, firm, white fish with a moderate-to-high fat content that stops it from drying out. In New Zealand, it is most commonly pan-fried or baked, but it also holds its shape beautifully in fish pies, soups, curries, and casseroles.
